Preparing meals for my hosts brings me joy, particularly when making Chinese cuisine, as it serves as a poignant reminder of my birthplace. It is a fantastic opportunity to offer them a glimpse into my background.
My background is as an exchange participant from Germany, currently living in Idaho, USA. Although I was born and raised in Germany, my parents emigrated from China over two decades ago. The Lunar New Year stands as a pillar of Chinese tradition. Observed on the initial day of the Lunar Calendar, the occasion is vibrant, spirited, and communal. Relatives gather to trade gifts, converse, and feast on exceptional dishes.
Because I could not be with my biological family for the most recent Lunar New Year, I was determined to bring that celebration to my host family. I made traditional Chinese dumplings, known as jiaozi or pot stickers. These items represent good fortune and wealth, making them a staple of any New Year banquet. Additionally, their flavor is superb.
The appeal of crafting jiaozi lies in the ability to personalize the contents, incorporating pork, poultry, seafood, or a preferred selection of garden vegetables. The possibilities for ingredients are nearly limitless. This specific version, a favorite of mine, was taught to me by my father. While the process is straightforward, it is labor-intensive when started from scratch, which is why it usually becomes a cooperative family project.
Jiaozi (Serves 5 to 7)
Components
For the exterior skins (commercial versions are an alternative):
One and a half cups of all-purpose flour
Water as needed
For the internal mixture:
One pound of ground pork
One and a half cups of finely shredded cabbage
Three cloves of garlic, crushed
Two scallions, chopped
One tablespoon of grated ginger
One tablespoon of hoisin sauce
Three tablespoons of soy sauce
Three tablespoons of sesame oil
Steps
Gradually incorporate water into the flour. Work the mixture manually until it transforms into a pliable, uniform dough. Allow it to sit for a minimum of sixty minutes.
Once the resting period is over, roll the dough into a thick cylinder and slice into small segments. Flatten each segment into a thin disc roughly 8cm in width.
Combine all the elements for the internal mixture thoroughly.
Arrange the skins on a flat surface. Place a tablespoon of the mixture in the middle of each skin. Bring the edges together to form a crescent, pressing firmly to ensure they are shut.
Pour a small amount of oil into a level skillet over a medium flame. Arrange the dumplings in a single layer and fry until the undersides are crisp and bronzed (roughly 3 minutes). Pour approximately 1/3 cup of water into the skillet, cover with a lid, and allow them to steam for several minutes.
Present the dish alongside soy sauce and rice vinegar for dipping.
